Starting a Business in Calamares or Squid Ring Making

Squid is popular food in many parts of the world. Squid is called “calamari” (from Italian word “calamaro”). Normally calamares is a fried squid. It consists of batter- coated, deep fried squid, often fried for less than 2 minutes to prevent it from becoming too tough. It is usually served plain with salt and lemon on the side.

In Chinese cuisine, the squid is often dried, coated in a salt and pepper batter and served with spicy hot garnishing of chili and salt. Calamares is now considered as street food in the Philippines.

One (1) kg. of pusit cost P200.00, 1 kg. of pusit processed as calamares gives a yield of 120 pcs. which is sold @ Php3.00 per piece, 120 pcs of calamares x Php3.00 will cost Php360.00. Production cost per ring is approximately Php2.00.


  • 1 tsp Salt
  • 1 tsp Ground black pepper
  • 1/2 tsp MSG
  • 2 pcs Eggs, medium
  • 1 cup All purpose flour
  • 2/3 cup Chilled water
  • 1 medium Onion, chopped
  • 2 Tbsp Garlic, chopped
  • 1/2 tsp Meaty ginisa
  • 2 cup Cooking oil


  1. Clean squid very well. Remove the internal organs and cut into rings  (120 rings/kg).
  2. In a separate bowl, add well beaten eggs and all purpose flour. Add chopped onions, garlic, and meaty ginisa.
  3. Deep-pot fry until golden brown.
  4. Serve in a platter.
